About Chef Masayuki Okuda

Chef Okuda is a name widely recognized in the Japanese culinary scene as a Grand Master who has trained many chefs and won many accolades for his work in sharing Japanese cultures and flavours far and wide. The winner of many cooking competitions and the Goodwill Ambassador of the Food for Shonai Region, Yamagata, he is also the Tourism Ambassador for Tsuruoka City, Yamagata.

In Japan, he is the holder of countless awards, among them the Yamagata Shimbun Award Peace Prize, the Shizuo Tsuji Food Culture Award and the Culinary Masters Silver Award from the Ministry of Agriculture, Forestry and Fisheries. In 2021, he was also named a Sake Samurai by Japan Sake Brewers Association Junior Council, making him only one of three to hold the title in all of Japan.

Chef Okuda is also the pioneer of Ginza Olion Sushi, the ‘World’s First Oil Sushi’ that is crafted with no soy sauce, only select oil and salts sourced from all over the world. This intricate understanding of flavours between 50 types of oil and 100 types of salts brings out a special flavour achieved through no use of soy sauce, only a careful mixing of oil and salt components for an incomparable harmony in flavour and unique taste experience.
