Chilled Tuna Tataki
This appetiser is a burst of flavours from the tender, pan-seared peppery tuna to citrus infused apple crisps with crunchy quinoa puffs.
The fish in this main dish is charcoal-grilled to impart a smoky flavour, and is slow-baked in the oven, before being paired with sauté garden vegetables, green pea puree and pesto cream.
Passionfruit Cream with Fleur De Sel Caramel, Chocolate Coral and Coffee Sand
Packed with different dimensions of tastes, textures and flavours : Sourness (from the passionfruit mousse), sweetness (from chocolate sponge), bitterness (from coffee sand) and saltiness (from salted caramel), this dessert will be the perfect finish to your lunch.

About Chef Samuel Quan
Chef Samuel Quan is a young and promising chef who has made waves by representing Singapore for overseas culinary competitions since his days in SHATEC (Singapore Hotel and Tourism Education Centre). He was awarded Silver Medal in both Hot and Cold Displays in the International Young Chef Competition in Korea in 2013. His persistence to constantly seek to innovate and push the envelope makes him a perfect candidate to assist the Singapore National Culinary team which created history by clinching double golds at the Culinary Olympics 2016. Chef Quan has clocked hours in various established hotels and celebrity restaurants, including Michelin 2-star Restaurant Aponiente, one of Spain’s best restaurants helmed by Chef Ángel León who was named Spain’s best chef at the Royal Academy of Gastronomy’s awards in 2013, and Les Amis restaurant.
